A simple and delicious grilled salad for summertime.
The best way to enjoy a healthy dinner
It's grilling' season! One of my favorite ways to get some good use out of my grill in the summertime is to throw a head of romaine lettuce, a few veggies and a nice big lobster tail on the rack for dinner. Its healthy, filling and gets you outside to enjoy the nice weather! The great thing about this recipe is that you can use whatever grilled veggies you'd like and even swap out the lobster for a nice fillet of fish, shrimp or a plant based substitute.
Grilled romaine and lobster salad
Ingredients
1 head romaine lettuce, washed and cut in half lengthwise
1/2 a yellow onion
Handful of cherry tomatoes
1 lobster tail
Vegan mozzarella for sprinkling
1/2 an avocado
1/4 cup vegan butter, melted
2 chives, chopped
1 lemon for juicing
1/4 cup green goddess dressing
Method
Butterfly the lobster tail to prepare for grilling and season with salt/pepper and any seasoning blend you prefer. I like to use a cajun seasoning for this recipe.
Slice the onions into thick pieces and cut the tomatoes in half. Place in a tin foil packet with a drizzle of olive oil.
Place the veggies on the grill at meduim/ high heat while preparing the butter for the lobster. Place the vegan butter in a microwave safe dish and melt. Add the chives and a squeeze of lemon juice to the melted butter and set aside.
Place the lobster on the grill and baste the lobster with the butter mixture frequently until fully cooked. This should take about 1-1 1/2 minutes per ounce of tail.
In the last few minutes of cooking time, Drizzle a bit of oil on the cut side of the romaine half and grill until slightly wilted and charred.
Remove the items from the grill and assemble the salad by chopping the lobster into bite size pieces and topping the romaine with chunks of lobster, grilled veggies, cubed avocado, vegan mozzarella and a drizzle of green goddess dressing.
