Freshly grilled fish kabobs with a flavorful Puerto Rican twist.
The perfect addition to the grill this summer.
These sofritos marinated fish kabobs are flavorful, fast and don't dry out thanks to a generous layer of sofritos cooking base that keep the fish moist as the veggies cook on the grill. This recipe makes it easy to add fish into the mix on kabob night or feed a whole crew with a simple recipe.
Sofritos marinated fish kabobs
Ingredients
2-3 thick fillets( Ive used hogfish in the video)
1 red bell pepper
1/2 large yellow onion
Cherry tomatoes
1 large zucchini
Marinade
1 cup sofritos base
1/4 cup olive oil
Avocado dipping sauce
1/2 avocado
1 tbsp chipotle peppers
Juice of 3 limes
1/4 cup olive oil
Water for thinning
Method
Cube the fish fillets into 1 1/2 inch pieces. Combine the marinade ingredients and the fish into a bowl, cover and refrigerate for 20-30 minutes.
While the fish is marinating, cut the kabob veggies into large chunks, similar in size to the fish. Set aside.
Combine all ingredients (except water) for the avocado dressing into a blender. Blend until smooth and slowly adjust the thickness of the sauce with water until you reach a desired consistency.
Assemble the skewers and brush with any remaining marinade. Place on a hot grill for 3-5 minutes per side. If you wish to have the veggies softer, consider putting them on separate skewers or cutting them into smaller pieces.
