A quick and dirty protein packed lunch for any day of the week.
An effortless and delicious fish taco lunch.
There are days when I want to have all the flavor and none of the effort. These are the days that I reach for this recipe! You can adjust the ingredients to your liking, dietary needs or what you have in the fridge but most days I have these ingredients sitting in my pantry and a few fresh veg in the fridge to make up a simple yet satisfying fish taco bowl that fills me up and is ready in under 15 minutes if you have precooked fish.
Layered fish taco bowls
Ingredients
1 8-inch tortilla
1/2 cup refried beans
1/2 cup corn
Handful of grape tomatoes
1/2 an avocado
1/2 cup vegan cheddar or mozz.
1-2 medium fillets of white fish(enough for 2 portions)
Taco seasoning or equivalent spices.
2 5-inch oven safe ramekins
Cabbage slaw
1 cup shredded cabbage
2 tbsp vegan mayo
1 tbsp chipotle peppers in sauce
Juice of one lime
*Mix slaw ingredients together in a medium sized bowl and refrigerate until ready to use.
Method
Prepare the fish fillet by sprinkling with a generous amount of taco seasoning and baking at 375 ° F until the meat is opaque and flakes easily, about 7-10 minutes depending on the thickness of the fillet. Set aside.
In the ramekin, start by pressing a tortilla into the dish and up the sides to create a lining. One by one, layer the beans, corn, 1/2 of the cabbage slaw(1/4 in each ramekin) and ending with a layer of fish topped with cheese.
Place under the broiler for 10 minutes or until the edges of the tortilla start to brown and the cheese bubbles.
Remove from the oven and top with the remainder of the cabbage slaw, chopped tomatoes and sliced avocado. Enjoy with a side of your favorite hot sauce or salsa.
This recipe can easily be adjusted with any layering ingredients. You can add items like rice, black beans, chopped peppers or sautéed fajitas veggies, just to name a few!
