Poke boats with wasabi mayo

We love poke and we love small bites so let's put them together for a delicious poke app at your next game night with fish loving friends! From seaweed salad to sushi rice and chili oil marinated fish, We're pulling all the stops to make every last bite an unforgettable one. Poke boats with wasabi mayo


Ingredients


  • 4 oz fish of choice( I'm using cero mackerel)

  • 100g uncooked sushi rice

  • 1 med carrot, peeled and shredded

  • 1 large cucumber

  • 1/2 avocado, cubed

  • 60g seaweed salad

  • 1 tbsp chili crisp oil

  • 1 tbsp soy sauce

  • 1 tbsp seasoned rice vinegar

  • 2 tbsp vegan mayo

  • 1 tsp wasabi (adjust to taste)

  • Lime wedge

  • 1 tsp seseme seeds

  • Sprinkle of Furikake


Method


  1. Cook sushi rice according to package and let cool, add the seasoned rice vinegar and mix. With wet hands, form the sushi rice into about 14 equal size balls.

  2. Cube your choice of uncooked fish into bite size pieces and place in an air tight container with the soy sauce and chili crisp oil. Shake and refrigerate until ready to use.

  3. Cut the cucumber in half, lengthwise. With a spoon, seed the cucumber until you form long boats.

  4. Place 7 rice balls in each cucumber half and start to layer the rest of the poke ingredients. Fish, carrots, seaweed salad, avocado and sesame seeds.

  5. Mix the mayo with the wasabi and a squirt of lime juice, drizzle over the top. Sprinkle with Furikake seasoning and enjoy!
