HEARTY FISH PIE

This hearty fish pie is filled with familiar flavors from childhood with a plant based twist that you can feel good about. Add in a fillet of sustainably caught flakey fish and you've got a seagan dinner for the the whole crew!

The holidays are around the corner and I often find myself reminiscing of family gatherings, hearty meals and full bellies. Living away, I'm not always able to make it home for the festivities but I always doing my best to replicate those moments with friends and the community around me. Throwing on the holiday tunes, putting fresh bread in the oven and cooking up a hearty meal like my fish pie is certain to bring the right kind of feels, wherever I may be.

A sure way to make the dinner table merry and bright this season

This dish combines classic savory pie fillings of mushrooms, peas, carrots and green beans all wrapped up in a decedent cream sauce. But of course, this wouldn't be a seagan recipe without a flakey fish fillet added in. Sautéed in a pan with aromatics and flaked into bite size pieces, you'll love the extra depth it adds to this otherwise, plant based dish. Finally we top the filling with buttery mashed potatoes and broil until golden brown. try the recipe below- you won't want to miss out!

Tips and FAQs:

Choosing your fish: Do your research! Buy local, from the source ( local fisherman) or get out on the water and harvest your catch. For this dish, look for mildly flavored fish such as snapper species, mahi, wahoo, cod, etc.

What is almond base? almond base is a mixture of finely ground almonds and small amounts of water to make a creamy paste. I buy mine from the company, Joi.

What if I don't have single serve dishes? That's fine! you can use a deep 12x12 baking dish.

Can I make this a plant based dish? Absolutely! omit the fish fillets and add in an additional 1 cup of mixed veg.


HEARTY FISH PIE


INGREDIENTS

(makes 4-5 single servings)


  • 2-3 mildly flavored fish fillet

  • 1 can or 1 1/2 cups cooked mixed vegetables (Chopped carrots, peas, mushrooms, green beans )

  • 3 tbsp almonds base ( I use JOI brand)

  • ¼ White onion

  • 2 medium russet potatoes

  • 2 tbsp vegan butter plus extra for topping and sautéing

  • 5+ tbsps vegetable broth or water

  • 1 handful of chives, chopped

  • a sprig of fresh thyme

  • a sprig of fresh rosemary

  • 1 tsp paprika

  • 1 tsp minced garlic

  • salt and pepper to taste

METHOD


Directions should always be short and to the point.

  1. Peel , chop and boil potatoes in salted water until fork tender. Drain and once slightly cooled, add chopped chives and 2 tbsns of butter. Mash until smooth and season with salt and pepper to taste. Set aside until assembly.

  2. Sauté the fish fillets, minced garlic, rosemary, thyme, paprika and chopped onion in a pan with 1 tbsp butter until the fillets are cooked through and onions and garlic have softened (about 10 minuted on medium heat). Remove from the pan and set aside until assembly.

  3. In the same pan that was used to cook the fish- Add 5 tbsns broth or water, 3 tbsp almond base and the cooked or canned mixed vegetables. Turn the burner to medium heat and stir to incorporate the almond base and liquid. keep an eye on the stove and occasionally stir as the sauce thickens.

  4. Once the sauce has thickened to a cream, add in the fish and aromatics you set aside earlier. Gently incorporate and break up the fish into bite size pieces. Let simmer for 5 minutes on low, occasionally adding a tbsp of water or vegetable broth if the sauce gets too thick.

  5. Gather 4-5 oven safe personal sized ceramic dishes ( I used 6 inch soufflé dishes for mine). Fill each dish 2/3 of the way up with the fish mixture. Spoon a layer of the mashed potatoes atop each dish. Run a fork over the top of each dish to seal the edges of the potatoes and create a design that will crisp up nicely in the oven.

  6. Before serving, put the oven on broil and place the pies in for 10 minutes or until the potatoes have created a golden crust. Let cool for 5 minutes before serving and top with green onion for garnish.


There you have it! Get yourself ready for a kitchen filled with warm scents and feel-good tastes. I cannot think of a better way to start the holiday season off right. A hearty fish pie on the table and my favorite people there to enjoy it with me.
