Minimal ingredients, minimal effort and virtually zero clean up. This sheet pan soup has to be the easiest recipe yet!
This recipe makes you feel like you've hit the jackpot! It's the perfect meal when you want something homemade and healthy for dinner but can't be bothered to take the time to do it. It's fresh, has little clean up and only requires a few veggies, herbs and broth to make a heartwarming soup any day of the week. This recipe can also be made ahead of time and frozen in servings for an easy meal to reheat when needed.
Flavorful veggies and aromatic garlic n' herbs
Juicy tomatoes, rep peppers and carrots are roasted along side an entire head of garlic and plenty of thyme in the oven until golden brown. Once the peppers are skinned and the garlic is squeezed throw it all into the blender with your favorite veggie or miso broth to blend until smooth. This recipe is a no-brainer on a busy evening when the moods hits for a warm and flavorful meal.

Ingredients
6 roma or plum tomatoes
3-4 red peppers
4 large carrots
1 head of garlic
2 white onions
Handful of fresh thymes
4 cups veggie or miso broth
generous amount of salt and pepper to taste
olive oil
Method
Preheat the oven the 450 and start by prepping your veggies. Peel the onions and the carrots, discard tops. Deseed the peppers, and roughly chop all of the veg. Leave the garlic head skins on and cut off the top so it's easy to roast.
Arrange the veggies on a baking tray along with the thyme. Cover with a generous amount of olive oil and salt/pepper.
Roast for 45-60 minutes in the oven. Cover with tinfoil if the veggies char too quickly.
Let cool slightly and peel the skins away from the red peppers, tomatoes (optional) and squeeze the garlic from its casing.
Add all the ingredients to a high power blender with broth and pulse until smooth. Taste test and add additional salt/pepper if needed.
Reheat on the stove before serving and top with a dollop of vegan sour cream and fresh basil.
