BANANA BATTERED FISH AND CHIPS

Say what?! Bananas?! Yeah...and its DELICIOUS. An extra crunchy, somewhat caramelized outer layer that offers just a hint of sweetness. Inside? flakey, fall apart in your mouth fish that will make you never want to fry fish another way again. Dip it in a homemade Plant based tarter sauce and BOOM. Best. Dinner. Ever. Maybe you're not an adventurous eater... Or maybe a purest of types that believes seafood shouldn't be paired with such an item. Im here to say... Don't knock it till ya try it.

This recipe all started when I wanted extra, EXTRA crispy and flavorful fried fish without the eggs. I wanted a thick batter that would stick on my fish and create an unforgettable crunch. So, one day as we sailed along to our next destination I decided to give bananas a try ( a popular vegan egg substitute in baking, but you knew that). What I got was not only the perfect crispy breading but a hint of sweetness and caramelization from the bananas that took the flavor of my fish and chips to the next level. Try it for yourself!

An unforgettable crunch

Thick fish sticks battered in seasoned banana and breadcrumbs before fried to perfection are paired with super simple sweet potato fries and a home made plant based tarter sauce to take it ups notch. This recipe never disappoints on flavor and offers easy seagan ingredients you can find at your local grocery store. No hard to find alternatives or lengthy processes. Just yum!

Tips and FAQ

Picking your banana: The riper the banana, the sweeter and more caramelized your breading will be. I like to use a bananas that is ripe and easily mashed but not overly brown.

Make it plant based: Use extra firm tofu and cut it into sticks to replace the fish.



Banana battered fish and chips

(4 servings)


INGREDIENTS


Fish sticks

  • 2 large, thick fish fillets

  • 2 ripe banana

  • 1 lime, juiced

  • 1 tsp paprika

  • 1/3 cup flour

  • 1/3 cup corn starch

  • salt/pepper

  • Panko breading (as needed)

  • Frying oil


Chips

  • 2 large sweet potato

  • Fresh rosemary

  • Salt

  • Spray oil


Vegan tartar

  • ¼ cup Vegan mayo

  • handful freshly chopped or 1 tsp dried dill

  • 2 tbsp capers/pickles

  • 2 tsp Dijon mustard

  • 1 tsp Lemon juice



METHOD


Heat oven or airfryer to 425 F

  1. Wash and cut sweet potatoes into fry size. Roughly 1/4 inch thick sticks.

  2. Toss in a bowl with a bit of rosemary, plenty of salt and spray oil.

  3. Place them on a wire rack and air fry in oven for 20-30 minutes.

  4. Heat an inch or so of frying oil in a pan on the stove to 350-375 degrees.

Prepare your batter.

  1. Combine the bananas, lime juice and paprika in a shallow bowl . Mash until the mixture resembles a raw egg texture.

  2. In another shallow bowl, combine flour, corn starch salt and pepper. Mix until well combined.

  3. In a third bowl, start with 2 cups of seasoned panko breadcrumbs. You may need too add more if you think it needs a refresh. Set these bowls up near your frying pan in the order of flour mixture, banana mixture and panko so you can easily bread and fry your fish sticks later.

Making the fish sticks

  1. Once the oil is up to temp, cut your fish fillets into roughly one inch by 4 inch sticks and pat dry with a paper towel.

  2. Dip a fish stick, one at a time into the flour mixture and shake off the excess. Then into the banana mixture until coated and lastly into the panko until the stick is densely coated. Immediately place the fish stick into the hot oil. repeat these steps for the rest of your fish sticks.

  3. Once the fish stick is in the hot oil, pan fry each for 3-5 minutes or until a golden crispy crust has formed rotating the sticks every minutes or so.

  4. When done, Place on a paper towel lined plate to soak up any excess oil and cover to keep warm.

Plant based tarter sauce

  1. Combine all tarter sauce ingredients in a small bowl and whisk. This is the perfect sauce to accompany your fish sticks and plenty other seafood based meals your making this week!





Crunchy, slightly sweet breaded fish sticks that pair perfectly with the tang of homemade tarter sauce. Its hard to get bored wen you are cooking with seafood but this recipe takes the cake when it comes to elevated your favorite fish fry.
