Fresh, herby dressing and sweet lobster make the perfect lunchtime combo for sandwiches or laid atop a bed of greens.
I've recently been enjoying making fresh dressings. The amount of amazing and flavorful things you can do with a handful of fresh herbs and blended nuts is incredibly delicious and much less expensive and space consuming than buying all of those store bought bottles.
Fresh, herby and delicious
Steamed fresh lobster, cool chopped veggies and a creamy green dressing make this salad a new way to enjoy your fresh catch. I personally love making my lobster into a creamy salad but as a Seagan (vegan/seafood) I don't eat mayo and although the alternatives are just as good, it's nice to switch it up from the traditional mayo based recipe and add in more fresh ingredients and flavor combos.
Green goddess Lobster salad
(serves 2-4)
Ingredients
2 lobster tails, cleaned and butterflied
1 cucumber or equal size zucchini
1 small yellow or red onion
1/2 an avocado
Handful of chopped almonds
These ingredients can be substituted for just about any fresh veg you like. This is just a basic list to go off of; I typically throw together whatever salad veggies I have in the fridge.
Dressing
Handful of an fresh leafy herbs like cilantro, parsley and basil
1 lemon, juiced
2 chives
3 cloves garlic
2 tbsp cashew nut base ( I use the brand, JoI)
1 tsp agave
Water for desired consistency
Directions
Butterfly the lobster tails by cutting through the top of the shell with a pair of scissors and gently pulling the sides apart. Steam for 5-8 minutes and set aside to cool.
In a high speed blender, add all of the dressing ingredients and blend. Add a tbsp of water at a time until desired consistency and creaminess is reached. Store in an airtight container in the refrigerator.
Shell and roughly chop the lobster tails, set aside in a mixing bowl. Rinse your veggies and chop then into small, equal sized pieces. Add them to the bowl with the lobster and toss.
Drizzle the green goddess dressing over the the mixture and toss until everything in nicely coated.
Serve over a bed of greens with a handful of chopped nuts or with your favorite bread/tortilla as a sandwich or wrap.
