A simple "sushi" lunch idea that uses my honey glazed hogfish bites and all the right fixin's
Sushi+ sandwich. Can it get any better? This delicious lunch idea combines my honey-ginger hogfish bites with layers of veggies and sushi rice to create a tasty grab-n-go sammie with wasabi mayo dipping sauce.
The perfect grab-n-go lunch
Season sushi rice, crispy veggies, creamy avocado and honey-ginger hogfish are only a fraction of what can be used in this recipe. Any kind of leftover fish and your favorite veg will do. Just be sure to season your sushi rice well and don't skip on the wasabi mayo!
Want it vegan? Replace the fish with seared or air fried tofu.
Onigirazu (sushi sandwich)
Ingredients
(Makes 2 sammies)
2 sheets of nori
1 cup sushi rice, prepared
1 carrot
1/2 cucumber
1 small avocado
6-8 cubes of honey ginger hogfish bites or desired fish
Wasabi mayo
1/4 cup vegan mayo
Splash of rice vinegar
Wasabi paste to taste
Method
Lay out the nori sheet with one corner facing you.
Pat down a layer of rice in the center and start to layer small amounts of the other ingredients on top, plus a dollop of wasabi mayo.
End with another thin layer of rice and begin to pull the corners of the nori up to the center, creating a little package. Gently press down to seal the sandwich and tuck in any corners.
Cut diagonally and serve with wasabi mayo on the side. Enjoy!
